Ciabatta

Makes two loaves.

  • 1 12 cups Water
  • 1 12 teaspoons Salt
  • 1 teaspoon Sugar
  • 1 tablespoon olive oil
  • 3 14 cups Flour
  • 1 12 teaspoons Yeast

Place water, salt, sugar and olive oil in bread pan of the Kuissential 2-lb Programmable Bread Machine. On top, add the flour. Make a small well in the flour and add the yeast. Choose dough cycle (9)2 lb. Loaf and press start.

Dough will be VERY wet and sticky - do not add more flour.

When cycle has completed, lightly flour hands and put dough on a lightly floured board, cover dough with a large bowl, and allow to rest for 20-30 minutes. Prepare baking sheets with parchment or lightly grease.

Divide dough into 2 mounds, and form each into ovals. Place loaves on prepared sheets, and lightly flour them. Cover again, and let rise in a warm draft free place for approximately 45 minutes to one hour. Preheat oven to 425 degrees F. Wet fingers and dimple dough, and then put pans in oven.

Bake for 25 to 30 minutes.

Kuissential Tip: Spray the breadmaker paddle with cooking spray to prevent dough from sticking!
