Lemon Glazed Cake 2-lb Loaf
- 3 eggs, beaten
- 1⁄3 cup buttermilk
- 1⁄2 cup unsalted butter, melted
- 2 cups all purpose flour
- 3 teaspoons baking powder
- 1⁄4 teaspoon baking soda
- 1 1⁄3 cups sugar
- 1⁄2 teaspoon salt
- 1 tablespoon lemon juice
- Zest of 2 lemons
In a small bowl, whisk together butter milk, cooled melted butter eggs , and sugar, add to bread pan of the Kuissential 2-lb Programmable Bread Machine. On top add dry ingredients and lemon juice and zest. Select cake cycle (9) medium crust, 2 lb. Loaf and press start, after 2 minutes of kneading, check and make sure the sides do not need to be scraped down,(if there is any flour, or batter stuck to the sides) if they do scrape them and mix into the center watching for the kneading blade. Allow to bake as normal.
When done, remove, allow to cool and then glaze.
**NOTE: You can make your own buttermilk by add in 1 tablespoon of white vinegar to 1 cup of milk.
- 1 1⁄2 cups powdered sugar
- 2 1⁄2 tablespoons lemon juice
Whisk together until the powdered sugar dissolves, use to glaze the cake once cooled.
